Pinot Noir dell’Oltrepò Pavese DOC
Fermentation, carried out using spontaneous yeasts, is accompanied by several days of gentle punching down to ensure a slow and gradual replenishment of the yeasts.
The vines yield less than a kilo of grapes per plant, harvested exclusively by hand. Destemming also remains entirely manual, preserving the integrity of the berries. As the racking process approaches, foot pressing gradually breaks up the still-whole berries.

PINOT NERO
The vineyards of Cigognola rise steeply from the last orogenic thrusts of the Apennines in the Lombardy-Liguria-Emilia triangle.
Beyond these extreme geological waves, the land in the direction of the thrust (from southwest to northeast) is flat up to the foothills of the Prealps, with few exceptions.
Precisely on the steep slopes of Cigognola, the Pinot Noir, nourished by the juices of the earth and combined with the heat of the sun (Purg. XXV), becomes wine with heart, mind, hands, and feet.
